Our Trip to San Diego

We had such an awesome trip down to San Diego this weekend! We flew into San Diego and drove up to Encinitas for our anniversary weekend. First, we dropped Evie off at camp and headed to the airport on Friday AM. We flew our favorite airline, Virgin America!


 We were on a BRAND NEW plane called "Jersey Girl" and since the Wifi wasn't hooked up yet, we got free premium TV and movies on our flight.

When we landed, we picked up our rental car and immediately headed to Blue Water Seafood Market. It came recommended from some of Erik's coworkers and it did NOT disappoint!

We waited in a line for awhile but it was worth the wait. Everything was super fresh and delicious.

After lunch, we drove up to Encinitas and checked into our hotel. We dumped our stuff and headed out to check out the beach and start our trip with some drinks!



We stopped off at Cardiff Beach Bar, just a few minutes from our hotel. 

In unlikely fashion, I got an actual drink which was SO good - pineapple cranberry deliciousness. It was called "shacked up". haha



We ended up eating here too and had a great seat to watch the sunset!

Lemon Thyme Chicken Crunch

Another yummy dish from the Campbell's Kitchen....Try this one out. It was delish!



Lemon Thyme Chicken Crunch

What You’ll Need
1 can (10 3/4 ounces) Campbell's® Healthy Request® Condensed Cream of Chicken Soup
1/4 cup water
1 tablespoon lemon juice
1/8 teaspoon dried thyme leaves or dried basil leaves, crushed
2/3 cup dry bread crumbs
1/4 teaspoon paprika
4 bone-in chicken breast halves, skin removed (about 2 pounds)
Vegetable cooking spray
How to Make It
1Stir the soup, water, lemon juice and thyme in a 2-quart saucepan. Remove 1/2 cup soup mixture and place in a medium bowl.
 
2Stir the bread crumbs and paprika on a plate. Dip the chicken into the 1/2 cup soup mixture and coat with the bread crumb mixture.
 
3Place the chicken onto a baking sheet. Spray the chicken with the cooking spray. Bake at 375°F. for 1 hour or until the chicken is cooked through.
 
4Heat the remaining soup mixture over medium heat until it's heated through and serve with the chicken.

Top 5 Tuessday

Summertime is vacation time ♥

TOP 5 TUESDAY

1. It's a short week! Four days of work and then a long weekend. Yahoooo!
2. We're going to San Diego on Friday. Cannot wait! It will be sunny and 70. 

3. BB Cream

This stuff is awesome. It's like a tinted moisturizer plus a little more. It's not a heavy makeup and  it makes your skin look smooth and nice.

4. Its Mays and Mama Night
Erik has an early hockey game so we will probably go for a nice walk, then go to Whole Foods for a big salad for dinner and do the laundry. I think Evie is depressed after having such a fun filled weekend. Hope she is excited for her weekend at camp though!


5. Handwritten Notes
I received a handwritten note via snail mail today. How often do you get one of those?! So nice to receive and read!





La Plancha with Lisa

On Monday night, I met my friend Lisa in Corte Madera for dinner at La Plancha Mexican Grill.


It's a restaurant in Marin County near a great little shopping center in the town of Corte Madera. The food was actually awesome!

It wasn't that crowded so we had great service and the food was really good. I had chicken and fish tacos and the food was very fresh.It came with a side of rice and beans, too.  Plus, they had a salsa bar. I Love salsa bars!

It has been so long since I've seen Lisa. She lives in Marin and has a one year old son and now we are in Berkeley so it's not super easy to get together. It was so great to see her and this was a good way to start the short week! I would totally go back!

Family Sunday

On Sunday, we took Evie and Kimmy to Cesar Chavez Park for a walk around the park. 

After our walk, we went to our breakfast spot - Sunnyside Cafe. It was HOT out so we were able to sit outside to eat. After breakfast, we walked home and chilled outside for awhile. Then, we went to Costco, the Nursery, and got $1 Ice Cream. 

When we came home again, Evie passed out. She was done from being awake and excited for two straight days!


We finished the day by grilling out again for dinner and then bringing Kimmy to BART. She took the train straight to the airport. She is heading to LA for work for the week so this was a nice stop for her before a week of work!

We love seeing Kimmy quarterly! 



Brewery Hopping

On Friday night, we drove down to San Mateo to see our friends Betsy & Greg for dinner. After a great time with them, we got to pick Kimmy up at SFO! Wahooooooooo! We picked her up around 10pm and headed home. Evie was thrilled to see her. 

On Saturday, we went up to Healdsburg and Santa Rosa. First stop was Bear Republic Brewery in Healdsburg. 


Yum...enjoyed my wheat beer while Kimmy & Erik drank their IPA's. I love when Kimmy comes because Erik has a dark beer drinking buddy.

We headed home after the breweries and picked up some groceries to grill out. We pumped the DMB tunes and chilled outside. haha.

This is Evie's punishment position. She ran to the fence and barked at someone so I picked her up. haha. She hates it!

Here is Evie's new toy we got her at Fideaux. She looooovvveeees it. 

Erik was the first one to bed. Then, Kimmy & I put on Gilmore Girls. Kimmy lasted 5 min so I would like to announce that for once, I was the LAST one up! haha
