Tortilla Soup


I'm working from home today which is great. I needed to just stay home and do work. I took a break to make a quick Tortilla Soup. It literally took 10 mins. I threw the onions/garlic/scallions in the food processor and dumped everything in together.

I added a little bit of cheese on top & it's so good!

Ingredients

1 tablespoon olive oil
1/2 medium yellow onion, chopped
4 cloves garlic, finely chopped
1 serrano chile, finely chopped
1 teaspoon ground cumin
1 (28-ounce) can diced tomatoes
Salt and pepper
2 cups water
1 tablespoon lime juice, more to taste
1/4 cup grated Monterey jack cheese
1/4 cup crumbled yellow corn tortilla chips
1 tablespoon chopped cilantro

Method

In a medium soup pot, heat oil over medium heat. Add onion and garlic and cook until the onion turns translucent, about 5 minutes. Add chile and cumin and cook a minute longer. Add tomatoes with their juices, water and salt. Cover the pot and cook gently, stirring occasionally, about 15 minutes. Stir in lime juice. Taste and adjust seasonings. Ladle soup into bowls and top with grated cheese, tortilla chips and cilantro. Serve immediately.
