Halloween Race Day

This morning, we ran the 4Mile Halloween Race at Ocean Beach. This was a great training run in preparation for my 10K that is coming up in a few weeks!

I finished in :42 minutes which is very good for me. That puts my mile time around 10:50. I was really happy with that time & felt great throughout the entire race. Erik finished in :33 minutes! He is so fast!!

After the race, we came home for breakfast. Then, we went to the Farmer's Market and then to Sports Authority. I was looking for a certain type of running top and found it on sale for $12!! We came home, sat down & both fell asleep. haha. Erik had the energy to go surfing after the nap; can you believe it? Evie and I went on our long Sunday walk which was great.

After a mani/pedi, I started cooking. We also had salad with Sweet Potato, Kale, Red Onion & Rosemary pizza. Deeeelish!!


Here's the recipe:

Sweet Potato Kale Pizza with Rosemary & Red Onion

Yield: 1 pizza

Cook Time: 10-15 minutes



Ingredients:

1 large sweet potato, thinly sliced, about 1/4 inch thick

1/2 red onion, sliced
1 1/2 tablespoon olive oil, divided
Salt and pepper, for seasoning potato slices and onion
1 1/2 cups mozzarella cheese
1 1/2 cups chopped kale
1 tablespoon balsamic vinegar
1 teaspoon, freshly chopped rosemary

Directions:

1. Preheat the oven to 400 degrees F. Place the sweet potato slices and red onion slices in a bow and toss with 1/2 tablespoon of the olive oil. Season with salt and pepper. Place on a large baking sheet and bake for about 20 minutes, or until the sweet potatoes are soft and tender. Make sure you turn them once during the 20 minutes. Remove from oven and let cool while you prepare the pizza dough.

2. Turn the oven to 500 degrees F or as high as your oven will go. If you have a pizza stone, place the pizza stone in the oven to get hot. On a lightly floured surface, roll out the pizza dough, using a rolling pin. Roll it out to about 3/8 of an inch. Place the pizza dough on a pizza peel or pan that has been generously coated with corn meal. Lightly brush the dough with the remaining 1 tablespoon of olive oil. In a small bowl, toss the kale with balsamic vinegar. Top the pizza dough with mozzarella cheese, sweet potato slices, kale, red onion slices, and fresh rosemary.

3. Place the pizza in the oven-directly on the pizza stone, if using one, or on the oven rack. Bake for 10-15 minutes or until pizza crust is golden and cheese is melted. Remove from oven and let cool for a few minutes before slicing. Slice and serve warm.

Productive Saturday

Saturday was a gorgeous and busy day for us. It was sunny and in the high 70's, which was awesome. I got a lot done including - going to our storage unit, stopping by Old Navy to use a 30% off coupon I had, going to BevMo for my new favorite Zin (edmeades) with coupon, and....purchasing my wedding dress!! Yes, it's official. The dress is purchased and will be in my hands in December. Yippee!

On Saturday night, we went to see Paranormal Activity 3. I heard this one was scary but I didn't think the other two were that bad. The theatre was pretty packed since it is Halloween weekend. It was pretty fun to see in the theatres because everyone was gasping and silent at the same time. haha There were some definite scary parts but overall, it wasn't that bad.



We didn't stay up late because we had plans to run the Halloween Race on Sunday AM!

St. Elmo's Fire

Friday was a lot of fun because me and two of my co-workers went out to dinner and drinks. It was my boss' LAST day so we went out to Zero Zero. I was looking forward to dinner because I have been wanting to go to this restaurant.

We shared a bunch of dishes which worked out perfectly because we were able to try a few different menu items. We had:

Roasted Mariquita Farms Cauliflower, Rosemary Cauliflower Chips

Eggplant Caponata, Olive Oil Poached Tuna, Parsley Aioli Bruschetta

Tomato Braised Chickpea, Rosemary, Burrata Bruschetta

Rigatoni, Piquillo Peppers, San Marzano Tomato, Pancetta, Basil, Ricotta Salata

Fillmore Pizza: Hen of the Woods Mushrooms, Leeks, Mozzarella, Parmesan, Pecorino, Fontina, Garlic, Thyme

Everything was good but my favorite dish was the Eggplant Bruschetta. It was delicious! We also shared a bottle of Unti Barbera.


After dinner, we went back to Churchill for some drinks. Erik joined us, too! I love when he is able to meet up with me!


After that, we went to....THE MINT. Can you believe it? We need a new loop to go when we go out. We have been there way to often. haha. One of my boss' friends came with us who is a die hard karaokier so she was fun to be with. I sang a NEW song this time which was a true crowd pleaser....Man In Motion from St. Elmo's Fire!! One of the best songs ever from the 80's!!

HAIR

On Tuesday night, I got to see one of my favorite Broadway shows....HAIR! It was awesome, of course. The show is off Broadway and on a national tour now.


I was so excited to see some of my old faves from the B-way version on tour.

When Kimmy & I saw HAIR back in 2009 on Broadway(for the 2nd time), we met some of the cast which was exhilirating! Here I am with Steel!
Before the show, we had dinner at Burger Bar. I had the

Chef's Veggie Burger this "burger bar" veggie burger is made of caramelized onions, button mushrooms, lentils, green peas, brown & white rice, pumpkin puree, potato, bread crumbs and mozzarella cheese with pesto

It was pretty good but nothing spectacular. There are a lot of good restaurants and burgers in SF. I probably wouldn't recommend this place for a burger and would only come back if I was in the neighborhood and starving.

It was a great night with friends and HAIR!
